Note titles are cut off at a certain point (doesn’t seem to be an exact character count) no matter how wide the notes list is, with an ellipsis indicator.
From what I can see, this only occurs in the tags view.
Try the latest beta. I’ve expanded the maximum width of the field. See if this is enough for you.

This just seems to be some odd behavior from Apple’s code. I’m not sure how to work around it.
Here’s what I’ve found.
When I first launch a Collection, long titles are truncated on the Tags tab.
But then…!
If I grab the left/right divider, and drag it to the left, to meet and pass the end of the shown title, and then move the divider back to the right…
The entire title becomes visible!
I performed this test with the latest beta uploaded to this site.
But it seems to work the same way with the 16.0.0 version currently available from the Mac app store.

For context, I switch very often between my laptop and external screen and double click the divider to get a balanced sidebar / editor width.
So when I move from to the bigger screen it looked quite odd having cut off titles with all that space there.
There is increasingly a lot odd things in the macOS UI these days.
